Soup is so comforting. The best ones are simple: organic beans and/or rice, veges, herbs, olive oil and salt. The secret is to cook your own beans and to use organic. Once you smell the aroma you will know why.
A few more hints:
1 cup beans to 4 cups water with 1 T. olive oil
Bring to a boil and simmer for 1 hour.
Put the veges, herbs and salt in when the beans are done.
Cook the beans the day before and you will be ready to make a fast, healthy meal!
